🥪 Croque monsieur
Ham and Gruyère sandwiches spread with mustard, topped with a quick cheese sauce and grilled until bubbling.

Ingredients
- 4 slices bread, white sandwich bread
- 4 slices cooked ham
- 100 g gruyère, grated
- 30 g butter
- 1 tbsp plain wheat flour
- 150 ml milk
- 2 tsp mustard, Dijon
- 1 pinch nutmeg, grated
- Salt, to taste
- Black pepper, to taste
Method
- Heat the oven grill to high.
- Melt half the butter in a small pan, stir in the flour for a minute, then whisk in the milk and simmer until thick. Season with nutmeg, salt and pepper and stir in a third of the Gruyère.
- Spread two slices of bread with mustard, top each with two slices of ham and half the remaining Gruyère (keep a handful back), then close with the other slices.
- Butter the outsides and fry the sandwiches in a pan over medium heat until golden on both sides.
- Move them to a baking tray, spread the cheese sauce on top and scatter over the last of the Gruyère.
- Grill for 3–4 minutes until bubbling and browned, then serve hot.
