Ingredients
- 250 g plain wheat flour
- 500 ml milk
- 2 eggs
- 1 pinch salt
- 40 g butter, for frying
- 2 apples, cored and very thinly sliced
- 2 tbsp icing sugar
- 1 tsp ground cinnamon
Method
- Whisk the flour and salt with half the milk to a smooth thick batter, then whisk in the eggs and the rest of the milk.
- Rest the batter for 10 minutes while you slice the apples. Mix the icing sugar with the cinnamon.
- Melt a knob of butter in a large frying pan over medium heat and lay in a few apple slices.
- Pour over a ladle of batter, tilting the pan so it covers the base and the apples.
- Cook until the top is dry and the bottom golden, then flip and cook the other side for 1–2 minutes.
- Keep warm while you cook the rest, and serve dusted with the cinnamon sugar.
