🍳 Tamagoyaki
Thin layers of sweetened egg rolled up in a frying pan into a soft, sliceable omelette.

Ingredients
- 4 eggs
- 1 tbsp sugar
- 1 tbsp mirin
- 1 pinch salt
- 1 tbsp sunflower oil
Method
- Beat the eggs with the sugar, mirin, salt and 2 tbsp water until smooth, without whipping in too much air.
- Heat a small frying pan (ideally rectangular) over medium-low heat and wipe it with oiled kitchen paper.
- Pour in a thin layer of egg. When it is almost set but still a little wet on top, roll it from the far side towards you.
- Push the roll to the far side, oil the pan again and pour in another thin layer, lifting the roll so egg runs underneath.
- Once set, roll back over the new layer. Repeat until the egg is used up.
- Wrap the roll tightly in a clean cloth or cling film for 2 minutes to shape it, then slice and serve warm or at room temperature.
